Black Beans & Barley
- Start by cooking about one cup dry barley (which will yield about two or three cups).
- Sauté one diced onion with some minced garlic.
- Throw in a handful of whatever vegetables you have on hand (carrots, corn, broccoli, peppers, etc.)
- Add some sea salt and let everything cook for a few minutes.
- Add a can (or half a bag of presoaked) black beans.
- Add one large can of diced tomatoes.
- Mix in some paprika, cayenne pepper, black pepper, and maybe more sea salt…
- Stir occasionally.
- When the water from the tomatoes has cooked off, add the cooked barley and mix.
