Black Beans & Barley

  1. Start by cooking about one cup dry barley (which will yield about two or three cups).
  2. Sauté one diced onion with some minced garlic.
  3. Throw in a handful of whatever vegetables you have on hand (carrots, corn, broccoli, peppers, etc.)
  4. Add some sea salt and let everything cook for a few minutes.
  5. Add a can (or half a bag of presoaked) black beans.
  6. Add one large can of diced tomatoes.
  7. Mix in some paprika, cayenne pepper, black pepper, and maybe more sea salt…
  8. Stir occasionally.
  9. When the water from the tomatoes has cooked off, add the cooked barley and mix.
  10. Enjoy!
