Strawberry-Lemon Muffins (Pictured above, in trash, with kitty litter)
- Preheat your oven to 375 degrees F.
- Combine the wet ingredients first - 1/4 c olive oil, 1/2 c soy milk, 1 egg, and the juice of 1 lemon.
- Then the dry ingredients - 1 c flour, 3/4 c whole wheat flour, 1/2 tsp sea salt, 1 tsp baking powder, 1/2 c white sugar, 1/4 c brown sugar, and some lemon zest.
- Mix 1 cup chopped strawberries into the flour mixture.
- Fold the wet mixture into the dry.
- Fill your muffin cups!
- Bake for about 25 minutes. Enjoy!
I substituted yogurt for milk… and kind of eyeballed everything so it was kind of wet and didn’t bake evenly… but the batter was delicious!
